Mini Fritattas


This morning I woke up before the hubby and made him and I some mini veggie fritattas. This is how to make them:
  • Preheat oven to 375
  • Whisk 4 eggs with about 3 TBSP milk and a dash of salt and pepper
  • Sauté chopped up tomato, green pepper, spinach, mushrooms, and chives in a sprayed pan for about 1 minute
  • Spray 6 of the muffin tin spots on a muffin pan
  • Fill evenly with the veggies
  • Top each with a little shredded cheese
  • Pour the egg mixture evenly over
  • 15 minutes in oven
They puff up, and the cheese rises to the top, and they are simply divine!


I enjoyed 3 of them with a slice of whole wheat toast (with a little margarine):


While eating our breakfast and enjoying a cup of Joe, the hubby and I watched a new show called "Glee." It has been getting RAVE reviews from critics all over, and I can see why! It was really funny and would appeal to people of all ages. Our 30 year old male friend actually recommended it ... although at first glance it seems like a TV show version of high school musical. There has only been the 1 episode so far, but we have set up our PVR to tape it regularly! If you haven't seen it, you should check it out!

My plans for today are as follows:
  1. Write a practice exam for the GREs (Canada's version of SATs)
  2. Go to work for a bit and get some planning done
  3. Relax
